COLLABMAS DAY 10 : CHOCOLATE MUFFIN RECIPE.

Hey guys what is up?! Today’s collaboration is with the lovely Monique who owns the blog Beachgirlmonique So we’ve both decided to share our chocolate muffin recipes with a bit of decorations. Please do go and check her out right after this. She’ll also a recipe posted on her blog.
Okay so I die for baked goods and I absolutely love baking them but I do suck at the presentation side. However today’s muffins did look good and tasted totally amazing so thank you to Snowflakes Ready mixes because where would I be without you?! Honestly I feel like I could take these muffins to some baking show for a competion.

Anyway I decided to use Snowflakes easy mix because honestly it is so easy to make and because it really doesn’t cost a lot. You honestly don’t even gain much muscle while doing it, so I truly recommend these to anyone who’s trying to impress other people with their baking skills because you can just pretend it’s some secret recipe when you actually just used a ready mix.

WHAT YOU WILL NEED.

  • Snowflake Easymix Chocolate Muffin Mix
  • 2 large eggs
  • 160ml cooking oil
  • 200ml water
Method

 

  • Preheat oven to 180°C.
  • Lightly beat eggs, oil and water.
  • Add Easymix into the mixture.

  • Spoon equal quantities of the mixture into well-greased muffin pans, two-thirds full.
  • Bake for ± 20 mins.

Okay so originally the muffins are supposed to look like this.

But because Journey is a savage, I went out to go buy some wafer chocolate and then I crushed it all up into small pieces and while the muffins were still hot I added the chocolate pieces inside the muffins and then they just started melting into the muffins.

So here’s how mine’s looked.

And then for next batch. I decided to be a little more saucy so I went a little extra on them and here’s how they looked.

Okay so I don’t even know what to call them anymore. Chocolate muffins with??nUhm chocolate pieces? Honestly I never studied for this.

Anyway so that is my chocolate muffins recipe, tell me if you guys liked it. The package says that the packet can only make 12 muffins but I did end up with but I think that’s mainly because of the sizes but I don’t know. If you are a savage and use ready mixes please leave a comment telling me of your face ones.

COLLABMAS DAY 1 : CHRISTMAS BAKING| CHOCOLATE COFFEE VANILLA BISCUITS.


Hey guys how are you?!?? Let’s get this Collabmas started!!! Am I the only one who’s excited about Christmas because I am on Cloud 9. Today I am doing a collaboration with KaylaHopeBlog. We have decided to do a baking post, because honestly what’s Christmas without all the baked goods?! Kayla will be sharing a short bread recipe with you guys on her blog so you should definitely go and check her out right after this.

So I decided to bake some biscuits. Now let’s just keep in mind that I’m a learner in baking lol so please no laughing is allowed. Initially I meant to make chocolate cookies which you can get the initial recipe here but then I didn’t have cocoa powder so I kind of twisted all the ingredients.

However this recipe still tasted so good so I highly recommend it.

INGREDIENTS

* 2 eggs.

* 6 tsps brown sugar.

* 1/2 cup vegetable oil.

* 1 tsp vanilla essence.

* 2 cups plain flour.

* 1 tsp baking powder.

* How ever much hot chocolate powder you’d like.

* 1 tbsp coffee

METHOD

1. Preheat oven to 180°C. Spray a clean baking pan with some non sticking pan spray.

2. In a bowl, beat the eggs, sugar, oil and vanilla until well combined.

3. Stir in flour, baking powder, hot chocolate and coffee.

4. Roll circles to any size of your liking and press with a fork or your hands to flatten them.

5. Bake for 12-15 minutes until they look crunchy and cooked in between. Leave to cool on the tray for 5 minutes then transfer to a cooling rack.
Then you should have something that looks better than this lol.


Honestly don’t judge a book by its cover because in my opinion these taste like heaven and they’d be really amazing on Christmas mornings with some coffee and movies.
I didn’t add any decorations because with the sugar that’s already in here I thought it’d be better not to go over board. I think this way they’d be really great to put in a jar and take them out for some coffee or even hot chocolate and not let them overwhelm you.
